Cut off the head of the mackerel, gut and cut out two fillets. Wash with cold water, pat dry with paper towel and season with salt and pepper on both sides.
Dice the onion and slice the garlic. Peel the carrots and cut them into half-slices. Scald tomatoes, peel, and dice them. Wash zucchini with cold water and cut into thicker cubes and leek into slices.
In a deep pan, heat the olive oil. Add the onion and fry while stirring until glazed. Then add leek, garlic and smoked sweet paprika. Fry for a while stirring and add carrots. After a while add the tomatoes. Season everything with salt and pepper, stir and stew under a lid for 10 minutes.
After this time add zucchini, capers, and basil leaves. Mix it all up. Place the mackerel fillets skin side up on top of the vegetables. Close the pan with a lid again and let it cook for another 10 minutes.
Fish with vegetables in tomato sauce is ready. Serve the dish hot, right away. It tastes great with fresh good bread.
