Ingredients

  1. 2 fillets of herring
  2. 1 tomato, peeled and diced
  3. 1 red pepper, peeled and diced
  4. 1 white onion thinly diced
  5. 1 clove of garlic finely chopped
  6. 1 teaspoon tomato paste
  7. 1-2 teaspoons buckwheat honey
  8. 1 teaspoon ground cumin (optional)
  9. 180 grams cooked white beans
  10. 1 tbsp butter
  11. salt, oil

Herring fried with lemon peel on white beans in tomato and pepper sauce

Preparation

Heat a bit of oil in a saucepan. Fry the onion and peppers, but don't stir too quickly or they will release water and cook the ingredients instead of frying. Add garlic, fry for a while and pour about 200 ml of water. Cook over low heat until the vegetables are soft and some of them start to fall apart. Add the tomatoes and tomato paste and cook for about 5 minutes. When the mixture resembles a sauce, add the beans, cumin, honey and butter. Stir for a while to combine all the ingredients.. Turn off the stove and add salt to taste..

Pour a bit of oil into the frying pan and when it is very hot fry the herring skin side first for about 5 minutes, gently salt it before turning it over to the other side.

Put the beans in a bowl with the sauce, place the herring on top and grate the zest of a previously scalded lemon.
