Ingredients

  1. 3 double herring fillets
  2. 1 onion
  3. 1 cup of water
  4. 10 cloves
  5. 4 grains of allspice
  6. 5 grains of black pepper
  7. 3 bay leaves
  8. 1 piece of cinnamon bark
  9. 1 clove of garlic
  10. 2 tablespoons of tomato concentrate
  11. 1 teaspoon of liquid honey
  12. 1 teaspoon of wine vinegar
  13. about 4 tablespoons of oil
  14. salt and pepper

Preparation

Drain them and cut into smaller strips. Dice half an onion and burn the other half over a burner. Pour water into a saucepan along with the following spices: cloves, allspice, bay leaves, peppercorns, cinnamon bark, crushed garlic clove and onion. Cook over low heat until 2/3 of the water has evaporated. Strain and leave to cool down.

In a separate bowl mix: tomato paste, honey, wine vinegar and cooled stock. Slowly pour in the oil, stirring all the time. Season and add chopped herring and half of the onion. Mix all together and set in the fridge overnight.
