Preparation
Dry the herrings with a paper towel and cut them into strips. Chop the leek and cut the cucumbers into thin slices and dice the apple. Drain the red beans and rinse under cold water. Put all the ingredients into a bowl, sprinkle with lemon juice and sprinkle with freshly ground pepper.
.Cream mix with natural yoghurt and mayonnaise. Add to the herring and other ingredients, season to taste with salt, and mix together. Put the prepared herring in the fridge for 30 minutes. Boil the jacket potatoes until soft. Serve with the herring salad and lemon pieces.
