Preparation
Put cauliflower, peeled parsley root, peeled pear without seeds and peeled potatoes into a pot. Pour the water and milk over the cauliflower, add salt, sugar and knob and cook for about 30 minutes until all the vegetables are soft.
.Place the soft vegetables in the blender cup and add the remaining liquid in the pot (add less if you want the soup to be thicker, add all of it if you want the cream to be a little lighter).
Add the cold butter and mix everything until smooth.
.Whilst the vegetables are cooking, clean the sprats, wash and dry them. Coat each sprat in spices and fry until crispy.
Serve the white vegetable soup with crispy sprats.
