Season the fillets with salt, brush with a beaten egg, then coat with a mixture of breadcrumbs and Parmesan (leave some of the cheese for the potatoes).
Cut the potatoes into thin slices (they have to be really thin). Drizzle with olive oil and coat with spices. Place on a baking tray lined with baking paper and sprinkle with the rest of the Parmesan coating on top. Place the flounder fillets next to it..
Bake the whole thing until golden brown for about 20-25 minutes in an oven preheated to 200 degrees Celsius.
