Clean the sprats. Wash them under running water, then pat them dry..
Peel and grate the vegetables with a fine mesh grater.
Heat the oil in a saucepan. Fry the onions, then the carrots and tomatoes. Stew everything for a few minutes. Season with salt, pepper, sugar and vinegar. Add bay leaves and allspice. Cook for around 30 minutes.
After this time add the sprats. Simmer for the next 30 minutes without stirring, then put the whole thing into a jar, screw it on and put it in the fridge.
The next morning you can make a paste for sandwiches with cottage cheese and chives.
