Preparation
Cook the marinade ingredients. Set aside to cool completely. Then put the herring carcasses into it. Cover and leave in a cool place for 2 days.
Afterwards drain the herring, remove the backbone and cut off the fins. Rinse under cold water and pat dry with a paper towel.
Rinse the herrings under cold water and pat dry with a paper towel.
Peel the onion, cut into small cubes and pour boiling water over it, let it cool down. Dice the gherkins, eggs and herrings. Mix in a bowl.
.Mix the lemon juice, oil, pepper, salt, dill and mustard in a cup. Pour into the bowl with the herrings, stir and set aside for 30-60 minutes.
Before serving
Before serving, remove to a plate, sprinkle with pomegranate seeds and dill.
