  1. 3 carcasses of fresh herring
  2. 1/2 small red onion
  3. 5 gherkins
  4. 2 hard-boiled eggs
  5. 1 teaspoon of mustard
  6. 2 tablespoons of oil
  7. lemon juice
  8. salt and pepper
  9. pomegranate seeds
  10. fresh dill
  11. 2/3 cup of water
  12. 1/3 cup of vinegar
  13. 2 teaspoons of salt
  14. 2 bay leaves
  15. a few grains of allspice

Herring tartare with gherkins

Cook the marinade ingredients. Set aside to cool completely. Then put the herring carcasses into it. Cover and leave in a cool place for 2 days.

Afterwards drain the herring, remove the backbone and cut off the fins. Rinse under cold water and pat dry with a paper towel.

Rinse the herrings under cold water and pat dry with a paper towel.

Peel the onion, cut into small cubes and pour boiling water over it, let it cool down. Dice the gherkins, eggs and  herrings. Mix in a bowl.


Mix the lemon juice, oil, pepper, salt, dill and mustard in a cup. Pour into the bowl with the herrings, stir and set aside for 30-60 minutes.

Before serving

Before serving, remove to a plate, sprinkle with pomegranate seeds and dill.
