Cut the vegetables, pour olive oil, and sprinkle with spices. Place on a baking tray lined with baking paper. Bake until golden brown, about 25-30 minutes in an oven preheated to 180°C Celsius.
In the meantime, prepare the fish. Clean and dry it. Season it with salt and pepper. In the meantime prepare the breadcrumbs. Blend together breadcrumbs, oat flakes, and chopped parsley. Coat the fish in flour, then in beaten egg and coat.
Add the fish to the vegetables after 25-30 minutes and bake for another 10-15 minutes. Serve with your favorite salad.
