Preparation
Wash the sprats with cold water and pat them dry.
Stir together the breadcrumbs, Parmesan cheese, roasted and crushed almond flakes and chopped cilantro.
Place the sprats in an ovenproof dish and drizzle with olive oil. Sprinkle the Parmesan mixture on top of each sprat. Place the tomatoes and lemon slices next to the fish. Also drizzle lightly with olive oil and sprinkle with salt and pepper.
.Place the dish in an oven preheated to 200 degrees and bake the sprats for 20 minutes.
Serve the fish immediately, hot, sprinkled with fresh coriander and fresh baguette.
