Preparation
Carve the fish and put it in a bowl. Add the grated lime zest, lime juice, salt, pepper and curry. Gently mix all together and set aside for half an hour.
.Meanwhile, make the salad. Cut the tomatoes into halves. Dice the onion and bell pepper finely. Chop the coriander finely. Mix all the ingredients, season with salt and pepper. Heat up a grill pan and fry the fish for 5 minutes on each side.
.Prepare the couscous. Put the couscous in a bowl and cover with hot water in a 1:1 ratio, cover with a lid and leave to cook for 5 minutes. After this time, lightly salt and stir (the couscous should absorb all the water).
.Plate the couscous, put the fish over it and the salad on top.
