  1. 2 Baltic cod fillets
  2. 1 red onion
  3. 2 cloves of garlic
  4. 10 dried tomatoes from leaven
  5. 10 cherry tomatoes
  6. 200 g of spinach, fresh or frozen
  7. juice from 1/2 of a lemon
  8. 100 g of mascarpone
  9. 150 g of sour cream (12% fat)
  10. 50 g of a favourite cheese: gorgonzola, mould or feta
  11. a pinch of salt and nutmeg
  12. freshly ground pepper
  13. pomegranate seeds and parsley for decoration
  14. 3 spoonfuls of olive oil from dried tomatoes
  15. rice to be served

Cod in cream sauce with spinach and sun-dried tomatoes

Wash and dry the cod fillets with a paper towel. Rub both sides with pepper and salt. Leave for 15 minutes.


Heat the olive oil in a frying pan and fry the onion chopped into slices, after a minute add the garlic and spinach. Fry everything for 1-2 minutes, sprinkle the spinach with lemon juice. Cover with a lid and simmer for a while until the spinach loses its volume. Add mascarpone, cream and crumbled cheese to the pan. Heat it up until it all comes together. Season the sauce with pepper, salt and nutmeg.


Add dried tomatoes. Bring the sauce to the boil, then place the fish pieces on top of the sauce and simmer for 10 more minutes, covered. When the fish is tender, season with freshly ground pepper, sprinkle with parsley and decorate with cherry tomatoes. Serve with rice or roasted potatoes.
