Sandwich with fried herring topped with egg yolk

Sunsets over Bornholm are a spectacle in itself. We were also charmed by the Sun over Gudhjem. Sol over Gudhjem is a traditional sandwich from Bornholm. Ingredients:

- 1 slice of raw herring
- rectangular wholemeal bread
- 25 g of butter
- 1 small kohlrabi
- 5-6 radishes
- 2 egg yolks
- 1 teaspoon of smoked salt
- 1 spring onion
- rapeseed oil for frying
- lemon to grind the skin
