Sandwich with fried herring topped with egg yolk

Sunsets over Bornholm are a spectacle in itself. We were also charmed by the Sun over Gudhjem. Sol over Gudhjem is a traditional sandwich from Bornholm. In its most classic version, found only in Gudhjem. We recommend you to try it at the source or try to prepare it yourself according to Wit's recipe, inspired by a stay on this Baltic island.


- 1 slice of raw herring
- rectangular wholemeal bread
- 25 g of butter
- 1 small kohlrabi
- 5-6 radishes
- 2 egg yolks
- 1 teaspoon of smoked salt
- 1 spring onion
- rapeseed oil for frying
- lemon to grind the skin
